estrat\u00e9gicas con actores del sector productivo primario, empresas, otras instituciones de educaci\u00f3n superior y centros de investigaci\u00f3n, tanto del sector p\u00fablico como privado, para fortalecer los procesos de investigaci\u00f3n y curriculares del programa de ingenier\u00eda de alimentos.<\/li><li>Proponer alternativas de soluci\u00f3n viables que respondan a problem\u00e1ticas reales del sector productivo agroalimentario mediante la formulaci\u00f3n y ejecuci\u00f3n de proyectos de investigaci\u00f3n que aporten al desarrollo regional, el emprendimiento y la sustentabilidad ambiental.<\/li><li>Investigar las propiedades de los alimentos, as\u00ed como las variables y fen\u00f3menos que gobiernan los procesos de transformaci\u00f3n, y que afectan su calidad e inocuidad para generar estrategias de mejoramiento e innovaci\u00f3n.<\/li><li>Formar talento humano con competencias en investigaci\u00f3n que act\u00faen con profesionalismo y \u00e9tica.<\/li><li>Liderar procesos de transferencia tecnol\u00f3gica y del conocimiento que favorezcan al sector rural.<\/li><li>Apoyar la investigaci\u00f3n formativa de los estudiantes de pregrado y postgrado a partir de los Abarca el aprovechamiento de subproductos, material alimentario no conforme para comercializaci\u00f3n, y la generaci\u00f3n de valor agregado en matrices alimentarias y no alimentarias.<\/li><li><strong>Calidad e inocuidad alimentaria:<\/strong>\u00a0Esta l\u00ednea de investigaci\u00f3n se encuentra orientada hacia el aseguramiento de la calidad e inocuidad de los alimentos, incluyendo la evaluaci\u00f3n de caracter\u00edsticas de calidad e inocuidad, prevalencia, resistencia, caracterizaci\u00f3n fenot\u00edpica y genot\u00edpica de microorganismos pat\u00f3genos y alterantes. Adem\u00e1s, abarca la identificaci\u00f3n, evaluaci\u00f3n y gesti\u00f3n del riesgo en las diversas etapas del proceso, la concepci\u00f3n, dise\u00f1o, implementaci\u00f3n, operaci\u00f3n, control, verificaci\u00f3n y validaci\u00f3n de sistemas de gesti\u00f3n para el aseguramiento de la calidad e inocuidad, y la interpretaci\u00f3n y aplicaci\u00f3n de normativa nacional e internacional vigente en las distintas etapas de la cadena agroalimentaria.<\/li><li><strong>Ingenier\u00eda en Alimentos:<\/strong>\u00a0Esta l\u00ednea de investigaci\u00f3n abarca la simulaci\u00f3n, planeaci\u00f3n, organizaci\u00f3n, direcci\u00f3n, control, ajuste, mejora, cambio y optimizaci\u00f3n de las operaciones unitarias involucradas con el procesamiento y la manipulaci\u00f3n de alimentos. Incluye planear, organizar, dirigir y controlar operaciones vinculadas con el procesamiento y la manipulaci\u00f3n de alimentos, as\u00ed como la implementaci\u00f3n de tecnolog\u00edas emergentes: altas presiones hidrost\u00e1ticas, campos el\u00e9ctricos pulsados, condiciones supercr\u00edticas, microondas, ultras\u00f3nicas, entre otras, y el estudio de los fen\u00f3menos de transferencia de masa, energ\u00eda y movimiento, para la optimizaci\u00f3n de procesos qu\u00edmicos y bioqu\u00edmicos,\u00a0\u00a0la separaci\u00f3n de sustancias y la extracci\u00f3n de compuestos biol\u00f3gicamente activos.<\/li><\/ul><p>A continuaci\u00f3n, en la tabla 2, se listan los proyectos de investigaci\u00f3n aprobados para el grupo en la Convocatoria de proyectos de investigaci\u00f3n del a\u00f1o 2023.<\/p><p><strong>Tabla 2.
